Jamie Oliver's Pork & Mash Gratin
Call me a little obsessed, but I cannot get enough of Jamie's 5 Ingredients Meals.
Except for being super delicious and so quick and easy to make, I still feel like I am experimenting every day and the best part is that every recipe has a little nutritional value table at the bottom of the page.
Like this one for the Pork & Mash Gratin:
This was comfort food to the max and I didn't even have to do too much to get delicious food on a plate.
Below the recipe:
Ingredients:
800g potatoes
400g piece of pork fillet
2 sprigs fresh sage
40g Cheddar cheese
4 slices of proscuitto
Method:
- Preheat the grill to high
- Wash the potatoes, chop it into 3cm chunks, then cook in a large pan of boiling salted water until tender
- Meanwhile, put a shallow casserole pan on high heat. Season the pork fillet with salt and black pepper, then place in the pan with 3 tablespoons of olive oil and sear for 3 min, turning regularly
- Pick the sage leaves
- Put the pork into a plate once it is seared and let it rest
- Toss the sage leaves into the pan and crisp for 5 seconds, then scoop it into the plate over the pork fillet. Take the pan off the heat - do not put it away as you will use it again
- Drain the potatoes, tip it into the casserole pan. Grate over half the cheese, add 1 tablespoon of extra virgin olive oil and mash well, loosening with a splash of water, if needed.
- Taste, season to perfection, and spread out to the edges.
- Grate over the remaining cheese, sit the pork on top, then gratinate under the grill for 10 minutes.
- Lay the prosciutto around the pork in waves, sprinkle over the crispy sage, then grill for 2 more minutes, or until the pork is cooked to your liking.
- Rest for 2 minutes, then slice the pork and dish up.
I know you will love this!
