Lentil Tabbouleh - A fancy name for an easy dish

So it's Monday evening and I need inspiration for something quick, but delicious after a hard day of work and having some Monday blues. This is usually when I turn to my old friend, Jamie... as in THE Jamie Oliver.

Today's recipe is Lentil Tabbouleh ...don't let the fancy name fool you as this lovely side dish took me a whole 20 minutes to put together. It's also very similar to the grain and lentil salad from Woolworths which is one of my favs. Try it with a chicken schnitzel or even as a side when having a braai. You can get the recipe here: https://www.jamieoliver.com/recipes/vegetables-recipes/lentil-tabbouleh/

Whilst I'm the one trying out new recipes, my fiance is a great eater and taster of my new good food. He suggested topping the Lentil "salad" (just because no one will ever remember tabbouleh) with whipped sour cream.

Healthy, quick and delicious...and as with anything, a glass of wine is always just fine 🍷
For this one, depending on the meat you choose to have with it, I'd suggest Sophie Te'blanche Sauvignon Blanc. It's so fitting for tonight and gives me a bit of inspiration and motivation for the week - "Sophie Te'Blanche, the most famous woman to never exist, and also a nickname in South Africa for Sauvignon Blanc." You can purchase this wine from Woolworths or any other liquor stores in SA.
