One-Pan Fish Bake



Sometimes I come across and try out recipes that will be in my head and heart forever and those usually become a regular on the weekly menu. The One-Pan Fish Bake was one of those recipes and I am happy to share it with you for when you feel like cooking something fresh, amazingly tasty, with as little effort as possible.

Ingredients (for 2-3 people):

- 1 Cup of Basmati Rice
- Chili Cheese (or you can replace it with basil pesto or olive tapenade)
- Fresh fillets of fish (I used 2 pieces)
- A handful different colored cherry tomatoes
- Red wine vinegar
- Basil
- Salt
- Black Pepper

Method:


  1. Place a casserole pan on medium heat on the stove
  2. Put your rice in the pan with 2 cups of water
  3. Once your rice has boiled for 10 minutes, add the chili cheese / basil pesto / olive tapenade to the rice to infuse
  4. Cut your fillets of fish into 3-4 equal pieces
  5. Place the fish pieces into the rice and put the lid on to steam a bit (if you need to add more water to the rice at this stage, do so)
  6. Cut the tomatoes in half, place it in a bowl and season with salt, pepper and fresh basil. Also dress the tomato mix with red wine vinegar (about 2 tablespoons)
  7. Once the tomato mix is ready, add it to the fish and cook for another 10 minutes
And that's that...then it's dinner time!
