Sweet Potato & Tomato Paprika Chicken



This dish was sent to me by one of my best friends who now lives in Holland. She is on a mission to serve healthy food to her family every night, which tastes amazing ... this is a must as she has two little ones to feed and take care of.

So yes, healthy food can taste amazing - and this dish is 100% proof!

Try it for yourself:

Ingredients:
  • 500g sweet potatoes
  • 300g chicken breasts (without the skin)
  • 1 Onion
  • 1 Clove of Garlic
  • 1 Teaspoon Paprika
  • 1 Teaspoon cumin powder
  • 30g Tomato Puree 
  • 10ml Olive Oil
  • 100ml Greek Yogurt

Method:
  1. Roast the sweet potatoes in foil in the oven for 40-50 min until soft. I was advised to poke holes in in the potatoes so they cook quicker and easier.
  2. Cut the chicken breast in cubes and brown in olive oil in the pan (season with salt and pepper)
  3. Put the chicken aside in a bowl to rest
  4. Chop the onion and garlic and place in the pan with the leftover olive oil and chicken juices for 2 min. Then add the paprika and cumin powder on medium heat for another 2 min. 
  5. Add the tomato puree and let it simmer for +- 2 min before you add the chicken.
  6. Take the sweet potatoes out of the oven, and smash them with a fork - go for the rustic look - nothing fancy!
  7. Dish the chicken, tomato paprika mix on top of the smashed sweet potatoes and drizzle some Greek yogurt on top. You can add basil / parsley to decorate.
