Sweet Potato & Tomato Paprika Chicken
This dish was sent to me by one of my best friends who now lives in Holland. She is on a mission to serve healthy food to her family every night, which tastes amazing ... this is a must as she has two little ones to feed and take care of.
So yes, healthy food can taste amazing - and this dish is 100% proof!
Try it for yourself:
Ingredients:
- 500g sweet potatoes
- 300g chicken breasts (without the skin)
- 1 Onion
- 1 Clove of Garlic
- 1 Teaspoon Paprika
- 1 Teaspoon cumin powder
- 30g Tomato Puree
- 10ml Olive Oil
- 100ml Greek Yogurt
Method:
- Roast the sweet potatoes in foil in the oven for 40-50 min until soft. I was advised to poke holes in in the potatoes so they cook quicker and easier.
- Cut the chicken breast in cubes and brown in olive oil in the pan (season with salt and pepper)
- Put the chicken aside in a bowl to rest
- Chop the onion and garlic and place in the pan with the leftover olive oil and chicken juices for 2 min. Then add the paprika and cumin powder on medium heat for another 2 min.
- Add the tomato puree and let it simmer for +- 2 min before you add the chicken.
- Take the sweet potatoes out of the oven, and smash them with a fork - go for the rustic look - nothing fancy!
- Dish the chicken, tomato paprika mix on top of the smashed sweet potatoes and drizzle some Greek yogurt on top. You can add basil / parsley to decorate.
